The Fudge/FATE RPG Chat Room is available 24/7. You can use the java-based chat interface at http://www.otherworlders.org/chat/fudge.html, or connect via an IRC client at irc://irc.otherworlders.org/FUDGE.
The best way to be sure you'll have folks to chat with is to invite others to the chat at a specific date and time.
